Medieval Playthrough mod suggestions
Currently I just have the Vanilla Expanded series but I was looking to start a full medieval-themed run and was curious if anyone had a list of mods that are compatible with each other.
I saw the Medieval Overhaul mod which I assume is a popular choice in most lists.

Medieval Fantasy, or plain Medieval? I lean more into the former myself, and I don't really have a set list of mods I use, but I could throw a bunch of ones at you to rummage through if you want.

I'd say Low-Fantasy, although Rimworld of Magic is something I've been considering.

I knew of the first and third one you posted, but I'll take a look at the Fortifications mod.

Edit: Regarding Supreme Melee, don't get fooled by its mention of becoming an unstoppable cyborg; the mod itself is more of a framework for allowing pawns to parry in melee and deflect projectiles. It comes with two traits to boost such chances, but mostly it just depends on how good your pawn is at Melee. It patches some specific bionics from other mods, but otherwise it got nothing that would interfere with a Medieval playthrough.

Alright then. Personally I find medieval playthroughs a bit more enjoyable with some more metals to work with. Though not too many as that gets a bit cluttered.

Fantasy Metals is on the stronger side, but each of them tends to be fairly specialized other than Mithril. IE Scarletite for Cut weapons, Orichalcum for Blunt, Adamantite for Sharp armor, Vibranium for Blunt armor. Solorite to be pretty.

Cupro's Alloys is an old favorite of mine, but you'll need a mod that adds a Fueled Smelter to make the most use of it in a medieval playthrough. I think Vanilla Medieval Expanded have such a thing though. The mod is more variety than it is quality save for a few choice metals, such as Copper being extremely handy to make early game hospitals, kitchens and research rooms due to its inherent Cleanliness. Copper beds also make for fast immunity gain! Unlike Fantasy Metals there isn't really any super metals, and even the highest end metal in Blacksteel is barely comparable with Plasteel... Well, unless you count Duralumin which is a pretty easy way of getting excellent cutting weapons. Although a Lead Mace is quite hilarious to employ too.

And the most minimalist option I am posting here would be the Glass & Ebony metals from the Morrowrim series of mods. They are okay balance-wise as far as I am concerned.

And if you want some more enemy factions to deal with, some of KompadT's Warhammer Fantasy mods rarely go wrong for me. Though I might warn you that the Dryads can be surprisingly vicious, and the Skaven's weaponry might stretch the limits of "Medieval Fantasy" a bit, what with hand-mortars and gatling guns. Their Warplock Pistols are extremely satisfying though! Comparatively, the Gor are just loincloth-wearing muscleheads with no real tricks other than being big and strong.

And if you have the Royalty expansion and want some additions for Tribal Psychic users, the Elders faction is quite nice in my experience.

And if you want some new environments and a whole lot of new beasts to consider, MorrowRim is pretty great if you don't mind the terrible weather and some Corprus disease. There is a lot of addon mods to go with it too by the same modder.

I think this is enough for one post, before it gets out of hand. I suppose it depends on what kind of areas you want to flesh out more, be it equipment, factions, animals, and so on?

Mass Graves, unless you plan on building a burn pit for corpses or something. You won't get crematoriums.

Tilled Soil (either the 140% boost or the 200% boost as your tastes desire) to replace hydroponic bays (Vanilla Farming Expanded also has low tech planting pots that work too).

Infinite Refuelables or Magical Freezer - while MF does give you options for the burn pit and freezer, I mostly use one of these two on medieval runs to have torches I don't have to spend half the game chopping trees to refuel. Seriously, the main issue I have with low tech runs is having to refuel my light sources *constantly*.

The Giddyup mods are good too if you want to have Knights riding into battle on horses. Some of the sub-mod functionality is now part of the new ranching system (horses making travel speed faster, etc).

I love Rimworld of Magic. I'm not going to list any race mods because that's more broad in terms of what 'fantasy' race types you prefer.

My experience playing the Medieval Overhaul mod with a Vanilla Medieval Expanded storyteller was that I didn't have access to leather tanning tech for quite some time which makes starting out as tribal a real pain not being able to craft proper clothing for quite some time. Those mods need to talk more to each other to prevent that kind of scenario.

Alrighty, thanks for the suggestions.

I'll grab what I think will work well and test them out with my usual QOL mods.
After testing them for a bit I'll probably make a public mod collection list and post it here.
