if you want to see performance data, go to Content Browsers -> Truck Browser or Trailer Browser. There you can see everything about all the trucks/trailers, even the stuff that will unlock at higher levels. All trucks in-game are capable to (almost) all jobs. So it is more of personal preference than an objective "best".
Noone else than YOU can do the research of what YOU prefer.
Technically, i.e. number of axles and geas, power, etc. it depends on what you intend to pull - or if you want large numbers on the door, although even the heaviest stuff can easily be pulled with 550 to 600 hp, in reality I have seen several oversize and overweight trucks (I worked in field sales some years) and none had 700+ hp, a few had 600+, most of them high 500s.
Job offers with own trailer is a double edged sword. You will get fewer different types of jobs, it is difficult to put frozen vegetables into a tanker and diesel on a flatbed. However, the number of jobs itself is increased a lot for common trailer types, i.e. curtainsider and box. Not so sure about flatbeds in ETS2, in ATS they also fall into this category. While without a trailer there may be 4 screens of jobs, with your own reefer or flatbed there will be 5 to 7 pages of jobs.
So especially when you want to have diversity or need it for Steam achievements or so, take jobs with trailer and get into different companies and transport different stuff. If you want to see different parts of the map or play realistically and often return to your home base, look for a common trailer type and use the larger number of jobs.
for trailers.... basically a dry van, curtainsider, or a reefer, as they get so much cargo types because they are mainstream-ish
i'd recommend buying the tralier DLC(s) for more trailer variety, and lots of mods for them as well, just picked up the Krone DLC yesterday and installed swapped chassis mods for it just for fun lol
I would advice 3 axle layout with lift axle unless you aim to haul only as heavy as possible cargo. in which case 3 axle with 2 drive axles is better choice. I would advice against the Mercedes and Volvo 4 axle trucks. you lose too much manouverability with those, thuogh it only affects when you are manouvering in tight places such as Trameri yards in base game area. Also while 2 axle is often best regarding fuel capacity, I have found that if you notice you come in with bit too much speed in to sudden sharper turns, it's the least stable, and likely to tip over.
If you want to haul tandem trailers (which is pretty much limited to Nordics, and Spain in my experience, I haven't been around in a while. and i might be wrong.)
I just bought the most expensive tandem trailer refrigerated last week in Finland, and I ran in to issue of not having almost any cargo, and the little cargo I have is often under 15 tons. The trailer combo should realistically be limited to around 60t. and being pretty much stuck in Finland, Swapped to dry goods trailer, and now I have at least some jobs, But still stuck in Finland.
I'm already thinking about selling the damn thing, even if it means thousands in losses.

If you have low power truck, make sure it has lot of gears, And I do mean all possible gears imaginable.
My personal favorite might be the older MAN with 640 (580 will get all jobs done) and 16 speed gearbox and rear lift axle. (2nd from top)
With heavy cargo and forgetting the lift axle up you start pulling wheelies when you start in slight uphill.
Although I'm currently driving the "best everything" Volvo and I'm disliking it. Huge fuel consumption, and it's just too unmonouverable in some places.
Yeah but driving a matching tractor and trailer combo looks cool, that's worth any and all limits on cargoes...

you can upgrade it to a 770S, although I use a 410S because I restarted my career (and I've been leveling up slow even though I have long distance and high price per distance when I took quick jobs) thanks to me installing ProMods
Totally agree with that bit, but I got tired of making paint jobs and not finding cargo (nearby), or no connecting cargo from the drop off company which is my prefered way.
And because I use Promods I can't rely on WOT jobs in ETS2.
