Steam Workshop has plenty if moded trucks, trailers, traffic, UI and many other kinds of mods. None of them are required. or nesseccary must have, that is up to you what you like and want.
You can filter and sort the workshop by popularity and rating. Pick the mods ,YOU are interested in. Try them out yourself.
AS OP have said it's good to have a profile that's vanilla for when the game is updated and a profile that has ProMods and everything else as far as mods go...you only have to wait a few days until ProMods latest version gets updated....as far as other mods go...sometimes they work on the current version and sometimes they don't...depending on the author keeping them updated and how old they are...I try to keep at least 2 going all the time...and keep my "serious" one going with updated mods.
Short answer: No.
Long answer: Depends on the Mod. Things like truck accessories, truck/trailer skins, additional trailers YES, BUT .. Before Deactivating those mods, you need to sell ALL the Modded parts/accessories/trucks/trailers/etc. so that you don't get errors from missing parts.
-Things like Map mods, NO, you can not remove them once installed without seriously messing up your saves/profile.
