In the options you have to set shifter behaviour to either splitter or range (forgot which one was it) and then you can shift as Captein here wants. You can also change between 2,4,6,8,10,12 and 1,3,5,7,9,11 but I have been playing with skrs shifter for a long time so I also forgot that :D
whats a skrs shifter?
I am using this one:

oh that looks interesting, I dont understand much about trucking, so the gear positions doesnt look much like the |-|-| pattern of a normal vehicle, to me at least.

Maybe this will help you to understand it better
I sure gave me an idea, but some doubts still remain if you could help me with that, for instance, back then when just using the sequential transmission, i had no idea whatsoever there was a range or splitter, so on an empty f16 i'd just start off at 3rd gear and skip one each shift until max gear, because the truck felt light enough to just skip every other gear. Now with some load, i'd go thru all of them or skip one or another depending on my speed.
using the splitter as the guide says, i'd have to start moving using the 1st gear slightly, press the clutch and use the splitter so it enter in 1st gear high, then go to 2low, 2high, and so on, lots to learn and get used to i guess, but thats really needed? i mean, i think the range swaps the gear positions, im guessing that on my shifter, the gear 1 positions would then become 6 and so on until 6th becomes 12... i wonder how these come to play in ETS2, if they have a real purpose or they're just for fun like the retarder, i mean, i know whats the use for a retarder in a real truck, but in ETS it seems that its needless since brakes dont overheat or wear.
The skrs is usually 3 over 3 gears and you can split each one of them which gives you a total of 12 gears. 14 if you use crawler gears ( scania 12+2 for example).
And you dont have to split every gear (you can never do it if you want to). I never split the first 3 gears but If I am hauling very heavy load then I sometimes have to do it. I start splitting the upper range of gears (when I get to 4th gear)
