The area around Searchlight Airport, as you already mentioned.
A bomb crater in the hills south of Nellis.
A road between the Legate's Camp and The Fort.
Seemingly unfinished mountain paths to the west of Red Rock Canyon.

If you want to explore the outer parts of the map you should make things easy for yourself and use the console commands
tcl (for toggle collision)
setgs fmoverunmult 30 (30 gives a decent increase in speed, though you can go higher,
you also need to crouch and uncrouch for the speed boost to kick in)
I'd also recommend you use NVAC, as speeding around the map like this is guaranteed to crash the game.
What I never tried was saving out in the middle of nowhere and try to load: to see if OoB map data can be saved in any manner, or it crashes the file, or just puts you back to the closest subcell.
Among other things I was able to circle around behind The Fort and lob grenades in; follow the elevated roadway that goes past Nellis for at least a kilometer to its end; approach the Mojave Outpost from the other side of the barrier then walk a very long valley on the other side of the mountians and Jacobstown and approach the other side of the end of the road with the trucks in the carter near Brooks Tumbleweed Ranch; walk beneath and around the crashed alien ship; walk far to the east of the Lake Mead--there are at least two additional valleys separated by mountains in that direction. All this without ever having to return to the established FNV map. In every direction you can walk a least a couple of kilometers until you reach the real end of the FNV world.
