Some of them can be used to craft a few things, and things like pre-war apparel and cigarettes can be exchanged late for Sierra Madre chips. A few junk is needed for an unmarked quest if your repair skill is not high enough. But in general, in vanilla game, no, they are junk. A few mods can find uses to them, for example Fallout 4's system was almost directly stolen from a mod called CraftMaster.

I'd say pick up every duct tape / scrap electronics / wrench / wonderglue
Use them ( + 2 scrap metal which are everywhere ) to craft weapon repair kits
And use said kits to repair expensive weapons before selling them.
Miniguns, super sledges, trail carbines, etc. They sell for 3k to 6k each.
If you're already rolling in caps nevermind.

Theres no settlement to waste time on. so you'd only need to craft to fit your own personal needs, which aren't that high considering how much stuff exists in the wasteland.

You'll be Rolling in Caps when you get around to maxing barter anyways, and weapon repair kits are generally a pain to make after you get Jury rigging.

Only Pick up Junk with intent to Sell. Only pick up craft goods with intent to craft a specific thing usually.

there are a few rare crafting items you might want to hold on to.

Pinyon nuts for example are useful for crafting dessert salad. which I carry around it weighs pretty little and heals for a significant amount. as well as lowering FOD and H20 needs.

Cave Fungus... is given to you alot in the DLC, but you need it to make hydra or healing poultices.

Weapon repair kits the pieces are given to you in Old world blues, (the sink is practically a Weapon repair kit factory) and Dead money gives them to you for 20 Chips each.

Would not bother crafting them, I'd just get a bunch of cigarette boxes and use the dead money vending machine. basically repairing my weapon with a carton of cigarettes (or after dead money it gives you thousands of chips every in game day.)

Ammo is crafted from ammo.

For the most part it isn't needed to hold onto a lot of junk items unless maybe you are running a logans loophole character, where you are using and making skill books like crazy, on hardcore mode where food and drink items are actually worthwhile, and a few other reasons. 95% of the stuff you can make is pretty useless, most healing items worthless compared to stimpack, etc. Once you get higher levels and can kill stuff with ease there is even less reason to make all those items (oh, you can make a food healing item that heals 4 over 5 seconds. Yea waste of even looking at your pipboy to see what it does.

But it is very fun to make a specialized run where you can actually use all those misc items and much is worthwhile like with a logans loophole hardcore run, taking advantage of EOT items (effect over time), crafting temp skill books which last a very long time, food and drink items providing great benefits, etc.
To me the most valuable and worthwhile misc items to pick up are Duct-Tape, Scrap Electronics, Scrap metal, Wonderglue and Wrenches. I horde that ♥♥♥♥ because you can make Weapon Repair kits and repair those high value weapons and then sell them for even more caps.

But yeah, it really does depend on what you are wanting to do and need though... so alot of the misc items could be useful to one person but not so useful to the other person.

So, to me? The five I mentioned are highly useful to me.

Without using mods I would have to agree with you but since I use mods the most important to me tend to be fission batteries, scrap metal, scrap electronics, sensor modules, and conductors for the mods I use tend to use them in their schematics.
