Should I buy Fallout New Vegas Ultimate Edition?

the dlc are great, the only one im not really a fam of is dead money, the rest are amazing

You'll save money if you choose the ultimate edition over going the route of buying the vanilla edition and buying the DLC later.

Buy FONV Ultimate Edition. Play through. Buy FO3 Ultimate Edition, install Tale of two wastelands.

10 bucks for NV ultimate is a steal. You will get hundreds upon hundreds of hours of entertainment. Or you can use that 10 bucks and treat yourself to a small cheese pizza at Dominos

I usually use this analogy: You can decide to buy half of a film or the entire one. First choice is FONV, second choice is FONV UE.
