If you don't see "Ultimate" there, then you don't have that edition.
If you do see it, first try to change the language to German, revalidate files, change it back, revalidate again; or, if still nothing, contact Steam support and specify that Steam failed to properly assign you all apps from the package you bought. Emphasise it is not Bethesda's fault as Steam says you own a package but not all items are present from it, meaning it is a database error from Valve's side.
(It is important as Steam support by default auto-rejects every issue related to his game with a message saying contact Bethesda.)
