If you dislike it that much you can easily replace the music for your personal purpose. Chose a menu theme from your own music, rename it to 'TLD_A_Tale_Untold', go to the music folder in the TLD files and overwrite.
It's also perfectly implemented - having an overly "eventful" or epic soundtrack would grate over time as M&B in general is a several hundred hours time investment so you need something to blend into the background somewhat but add colour, richness and excitement when needed.
It's just leagues above the original M&B soundtrack, and with the right amount of Tolkien-esque/Shore vibe. I particularly love the battle music when facing Harad or Rhun troops, it's original and sits so well with what i'd expect if they'd ever been fully featured in the films.
