What mounts can Uruk's ride?
Can't ride wargs. Can I ride Mordor warhorses?

Only special 'Huge Wargs' awarded by Mordor, Isengard, Moria, Dol Guldur and Gundabad I think. They are great, ride down your enemies for lots of prisoners and you can buy multiples from each one for your Uruk companions.

And what after a Certain Rank it unlocks? Mearly saying "you need Influence" not that helpfull.

I think you need Rank 5 to get a huge warg, as long as you have the influence.
