How Do You Get Vampire Blood Now?
Looks like both the mod and base game have gotten some huge overhauls since I played last, and now I don't know how Alchemy works properly.

Before, in order to turn somebody into a Vamp / Werewolf, I just had to have 5 of such creatures in my prison. But now that does not seem to be the case, as even with 5 vampires locked up, it still said I was missing vampire blood.

I tried looking online, and it said something about either collecting a blood tax from vassals (I'm playing an Inquisitor, so i can't vassalize vampires), or harvesting it from animals, which I can't seem to figure out how to do.

Executing the vampires, hunting vampires, or negotiating their release didn't offer me the opportunity to steal their blood either.

My Gauthier is 76 years old, and I want to turn him before he dies of old age, but it's proving increasingly frustrating.

Welcome back. Click on the new crafting item in the right-hand corner. Select alchemy. Select vampire elixir. Then look at a small window in the right-hand corner. You have to select a "human resource", in this case a vamp prisoner.
In this case it is more or less trivial, as a little bloodloss won´t do much. In case of Tzims it might be relevant which prisoner becomes your new chair or umbrella.

Thanks, I wasn't sure what the human resource thing was for. I thought it was asking somebody to help with the brewing process.
Well, the vamp prisoner helps with the brewing process. He most certainly contributes to it.

For brewing the new system is overly complicated. When it comes to soulforging for wraiths, fleshcrafting for Tzims, fetish crafting for Garou etc. it really adds a lot of value. There it makes a difference which ghost goes into which item.

I can't figure out how to get the magical ingredients for a potion of immortality. I've gone on several expeditions through the Umbra, but never saw an opportunity to harvest them.

Also don't know if the Werewolf and Changeling elixirs are working at the moment? Because even when I'm playing on a game where these creatures exist, I'm getting an error message when I try to click on the alchemy recipe.

Will say though, for the Debug options, THANK THE DEVELOPER for putting in an instant Journeys option. I was really hoping that would be added at some point, because waiting for it to tick down normally was just ridiculously long.
I haven´t tried the werewolf and changeling potions yet. You probably have to activate the Samuel Height mode for that, right?
The immortality potion is super nice but also weird and complicated. My "immortal" hunter children keep dying when they bodge "find lair" journeys. Sometimes "immortal" werewolves still manage to murder each other. Aside from that they work as advertized. I even got arrogant, went on a steal gold mission with an immortal crew and kept stealing until the guards executed all of us. We got to keep the gold and simply resurrected. It costs faith sometimes. No problems.
As how to get it: You need to journey into the deepest corners of the dreaming. The fuel is very hard to get and I only found it in the dreaming, water is plentiful everywhere except for the astral reaches, herbs can be found in some remote locations from the dreaming, the underworld and maybe the fera areas.
Lastly, the production costs seem to vary from 1500 to 200, depending on where you are. Low development areas seem to be better. Probably it is tied to the strength of the gauntlet. You also need a lot of knowledge, otherwise the success chance is pretty low.

Pretty sure they mean immortal, in the sense they don't die from old age.

If you want somebody who's impossible to kill, you turn them into a Mummy with the Spell of Life.
Well, I am aware that this is the cheap knockoff-version of the real deal. Still, only three characters have access to the spell of life. Horus is OP AF. The other two are challenge runs.
Immortal is advertised as "cannot be killed by normal means". A knive in the back is quite mundane. So is some guardsman´s halbert.
