But excellent mod, it did not help me nevertheless on my other playthroughs.
You can only convert capital of county and only when you own it, and you must already have that type of holding in county (you cant convert temple to city if that is the only temple).

Right click on the holding > Pillage Holding:
"Start Pillaging this Holding"

Sometimes it's instantaneous after conquest, sometimes several years...
