Some airplanes don't really work with MAAS, as I tried to land a Spitfire in it (it didn't work).
Make sure to be using Secret Weapons or Flying Legends. I'll check out how they work now with MAAS, but if you're not using these mods, the answer might be that the mods have some kind of incompatibility with the wires from MAAS.
I've been using this carrier with Secret Weapons and it worked perfectly with MAAS. Sometimes there's some weird stuff going on. Maybe the game didn't register your tailhook, as doing this kind of things might not be that normal for ArmA, at least in the way it is done.

And with the MAAS, you need to use Ctrl-Shift-M to deploy the tailhook and get the arrest cable from the carrier.
How do I use the cables.
Ctrl+M just says that MAAS is not deployed or too far away.

Making a walkable/usable LST would be quite difficult, as ArmA 3 engine is known for having a lot of limitations. So, no promises, but we'll check it out.
When it comes to rearming, you can put some boxes that you can grab and, again with Ace, rearm the vehicles. That's the only thing that came to my mind

The way to make you hook on the aircraft carrier is SHIFT + CTRL + M in the normal configuration of the mod.

Btw for the record, this carrier can't be destroyed, as it will just bug everything. I don't recommend you to try it hehe.
Now, for the akagi, a plane crashing into it will destroy it almost instantly. You can try spawning it with lower health, and that might help
