The Problem
The Mapping of the Buttons is reversed!
A is where B should be, and vice versa. Same for Y and X. You might not notice at all if you have not played Monster Hunter on both platforms before. But the issue can mess up your muscle memory a lot.

Reason for this issue is a Steam controller feature, which is supposed to make the Nintendo Switch Pro controller work better with other games. It just happens that the feature is messing up the gameplay for Monster Hunter Wilds.
The Solution
1. Right-click in your Steam Library on Monster Hunter Wilds
and open up the Controller layout. We want this change only to happen for specifically this game. With other games the issue might not exist. So it makes sense to specify it for this game only to avoid any unwanted changes for other games.

2. Remap the Inputs
Select Edit Layout and mirror the inputs, so it looks like this

3. Change Monster Hunter Wilds Input Options
Change with the options in Monster Hunter Wilds the Controller Button Icons and the Confirm Button

And now you are good to go - controls how you are used to from playing Monster Hunter on a Nintendo controller! Enjoy!

Happy Hunting!
Bonus Tip: Fixing Joy-Con Drift
When playing an exciting game like Monster Hunter Wilds, it is easy to happen that the joystick with any controller, whether it is a Nintendo Switch Pro Controller, a Playstation controller, or a Xbox wireless controller, can catch a drift. When that happens it looks like as if you were moving your joystick despite you are not touching it. A typical wear and tear issue over time.

The Nintendo Switch has an inbuilt auto-calibration to detect such issues which takes care of it. Steam controller support has one too which you can use. By increasing the so called "Deadzone" around the joystick you can reduce the effects of a drift so much, that allows you to use the joystick for a while longer without the need to replace it yet. Check it out, should you be affected.

Here is an old video of mine which shows how a drift can look like and how I got it resolved:
