I like to go for a religion with Babylon, because the free shrine makes it more doable, but don't pursue a religious victory. This leaves you free to forego beliefs that help religious conquest in order to get beliefs that help elsewhere. In addition to your picks, I like Feed the World to help early growth, and Jesuit Education to give me something needful to spend faith points on. Production and gold yields are otherwise occupied, so the utility of buildings that provide faith yields is enhanced if you have outlets for spending faith, like the Grandmaster's Chapel, or Jesuit Education, quite aside form patronage of great people, of course..
