Bread

• 2 slices thick white bread or sourdough

Cheese

• 1 slice sharp cheddar (flavor)

• 1 slice American cheese (meltiness)

• Cheese can also be shredded for better melting

Optional upgrade: a little Gruyère or mozzarella

Fat

• Mayonnaise

Optional extras:

• Pinch of garlic powder

• Pinch of black pepper


1. Preheat pan

• Medium-low heat (important)

2. Spread mayo

• Thin, even layer of mayo on the outside of both bread slices (Inside stays dry)

3. Add cheese

• Stack cheeses between bread slices

• Cheddar closer to the outside, American in the middle = better melt

4. Grill slowly

• Place sandwich in pan

• Cook 3–4 minutes per side

• Press lightly with spatula (don’t smash)

5. Flip once

•Wait until golden brown

• Cover pan for 30–60 seconds if cheese needs help melting

6. Rest

• Let sit 1 minute before cutting (keeps cheese inside)
