Also what is needed to mention is that all downloaded blueprints can be edited afterwards so you can still optimize them or give them another paint for example.

Can I do that here?
yes, you can avoid building your own ships entirely. But I suggest that you at least try to build your ships in the beginning to understand the shipstats better so you can decide better what you actually want from the workshop.
Is there a pack of ships that I can download and use? Or, do I have to read the description of each ship and download them individually?
Some builders make packs for their ships that you can download. Other upload single ships. There are no rules for the workshop so some include the stats of their ships as information and thats what you should look out for

You don't need to download all ships before you start playing since you can download and use them while you play the game.
Avorion really is a game the requires enough time played to be fun and valuable. It is really a random open world setting compareble to a much more complex version of minecraft in space. The trailers don't really show the gameplay. Check out some youtube letsplays to see what the gameplay is like if you havent already.

Older designs will probably need tweaking. Typically I find a fast way to do that is to replace an existing block (e.g. framework) with whatever I'm lacking in that design.
E.g. for an old design (pre-2.0) (ie. circa 2017-2019) the design might be lacking either power generation or power storage (the 2.0 release changed how those things work).
I go into ship builder, I click on the eye symbol, I scroll down to framework undt viola! Now only the framework blocks are showing*. I choose a block which looks about the right size and I select the type of block I want in the top left thingy and then there's a key I can hold down while I click on the framework and it'll just replace those blocks. Too easy.**

*Not all workshop designs have framework. In that case maybe try smart hull or smart blank hull instead.
**There's nuances to building blocks. E.g. two adjacent integrity field blocks will have a lot of overlap, so they'll cover a lot more if you merge them. (Select and then pick merge)
Whereas some other blocks work on area (solar panels should be as thin as possible) and some work on volume (cargo should never be thin) and some don't care (your crew can limbo/be-poured into whatever weird-ass mould you make for their quarters).
And so on and so forth.
You don't have to eat the whole space-elephant all at once, and tweaking designs can be a good way to ease into it, especially when you try something and it doesn't work and you don't know why, and then you figure out why.
If you wanted to cruise the galaxy killing space-pirates with extreme space-prejudice like a total space-bad-ass, then I'd recommend Crimson Damnation.
HON doesn't have specifically mining ships. (There's an IMC Feretory on their list, but IMC has better mining ships). The HON Wisdom class carrier though is one of the better 12 slot ships and so it's genuinely difficult for me not to immediately swap to it for all my freighter/miner needs when I unlock ogonite, even on playthroughs with completely different themes.
(For historical reasons really good 12 slot ships are kind of rare)

If you want a bunch of mining/multi-purpose ships with a red-dwarf kind of aesthetic (i.e. Red, Blocky and ugly as space-♥♥♥♥), the RIA (Red Imperium Armada) ships scratch that itch for me.
You might need a separate game in creative mode to tweak them and play around with the designs.
Typically I save them (HON / RIA) into their own folders, and this lets me keep them separate from the other workshop ships. In particular sometimes I want to meet a slot limit from building knowledge. E.g. if there's a design I like in the materials I like but it's say 9 slots and at that stage of the game my max would be 8 then I use the size translation (up to plus or minus two slots), though sometimes that messes up the turrets a bit.

I have a 4 slot scrappy and a 5 slot scrappy in my folders, so I think I must have tweaked that one (either bigger or smaller accordingly).

I think I tweaked it to use more iron maybe? E.g. select the block, and then replace the titanium block with whatever the iron block equivalent of it was.
Turrets of course would remain as titanium - for obvious reasons. That's another tweak, you can select to view only turrets, and then use group select to select all the turrets at once, and then pick the turret material you want, and then convert them all to that using the downwards arrow thingy.

There are a great many Star Trek themed ships, I like to do play-throughs with them. Maybe search for Orion or TrekOrion?
NB: TrekOrion gives 820 hits, so ... yeah ... there's a lot.
There might not be specifically a lot of miners, .... or I could be wrong - searching for "TrekOrion miner" returned over 2000 results, more than searching for just TrekOrion alone, so I dunno what's up with that.
You can often use a freighter as a miner (everything with cargo becomes multi-purpose if you slap enough guns on it), and I couldn't find the Star Trek freighters I use for remote mining, but I did run across this:

Which is another thing of beauty. I think that's the 10 socket version and I have a downscaled 8 slot version saved as well.
It pretty, and flies really well and .... all the turrets are on one side :o :D
I have a tendency to shove my traders into them.
There's a 10 socket cube I might also use some times, it might actually be close to optimal. Forget what it's called, sorry. (edit: "The Pod")

No cargo, but it's an absolute ♥♥♥♥♥♥♥ weapon. Good for everything (i.e. scout/escort duties) except stuff that requires cargo space. Star Destroyers wish they looked this good.
