Not sure about the alternate setting. But setting up a ship to sell and trying the different areas should help identify which is which, if they're hard to discern.
There are sometimes differences depending on what stations are nearby, and you can get extreme cases of high supply even if prices are high because price is capped at +/-30 but supply/demand has a wider range.
I'm not sure if supply also effects the speed of procurement missions, so if you're trying to source parts for your turret factories and you care more about time than price, maybe you want to look at the supply map, I'm not sure.
The colouring in the galaxy map heat-map corresponds to the colouring of the good in this list.
I defy you to find any references to the trading subsystem in the code for any of the galaxy map missions.
