1. Set your game to update when started ONLY.
2. Go to the Install folder and find the EXE that starts the game.
3. Make desktop shortcut for that EXE
4. ONLY launch game with that shortcut.
To get the mods to work with the new game build though all you need to do is
1. Get the Steam ID number for the mod that does not work.
2. Open the mod file and look for "modinfo.lua"
3. Find this " dependencies = {
{id = "Avorion", min = "0.31", max = "1.*"}"
4. Change that max to either greater than the current or that right there will mean it works for all future updates.
Either of those will work. The first one must be done by all clients joining the server. The second has to be done by all clients and the server. For the server you will have to poke around for it. Where it is will vary by your Host Company. If you are running Dedicated off a Server Box or your own PC then look in AppData/Roamin/Galaxy/Name of Galaxy.
Edit :
Ok, seems Steam changed something in February this year (02/2020) and Downloading older version is not working anymore. But some people seem to have figured a way and built something called DepotDownloader (on ghithub). Never tried it, no idea if that work. But worth to take a look just in case you need to revert some games to older versions (like we often had to do with Skyrim and Fallout 4 when 'thesda messed up their patching and demolished the compatibility of the Script Extenders)
Yes and if you read my first post thoroughly you will learn the work around for Steam. I have used that on several games so far. Though Steam still must be running you bypass the updating.
