Yeah, you do this with Lady Adventurous (sp?) very early in the game. [terribly mild spoilers warning]

It should have a captain and you'll need to add guns to it. That should be enough.
Note that Escort is a kind of defensive or 'protective' command - so the ships will try to stay close to you.
To clarify OP - you did actually give it the [escort] command, yes? It was automatically following you when you jumped?
I have no clue why the actual escort action break down when you do it. That's utterly stupid. But that's what it is. So if you do move around, you need to select every ship again and tell them to escort you again for it to work.
I didnt get what it wanted from me when I wanted to travel and the game told me it is just one sector away. Makes no sense to me either to do that differently.
Also I dont get why I get kicked off the ship when I use the travel function.
It is only when you use the move command in the map and select your ships as an escort that they completely forget what they were doing in the last sector. And the fact that the check boxes say "escort ships" simply add to the confusion. Same name, completely different results. And it is also doubly confusing because if I set any other autopilot command to, say, a mining ship to mine the sector and then ask it to "refine ores" on the map commands then it will remember that its last command was to mine the sector and get at it immediately after respawning. Only the escort autopilot don't do that, with the map move command. This part make no sense, nothing seem to be consistent from one thing to the next in this game.
No. The [Ships/Commands] mission doesn't even pop up until you hire your first captain. Lady Adventurous doesn't have a captain, you have to (read as: are supposed to) give her one (after the Adventurer hands over control of her to you (which is _after_ the successful completion of the escort command).
There are a small set of orders you can give a ship without a captain, and I think escort is one of them. Ultimately you'll want to give them a captain. You couldn't (just as a for instance) use the travel mission on the galaxy map (the thing the others are talking about) for a ship without a captain.
