Does this game alow you to build fleets and stations or is it mostly a single ship kinda experience?
imagine minecraft in space, a galactic sandbox with warring NPC factions, player made factions if you play MP, the ability to build ships, planetary bases, drones, and space stations, and thats starmade in a nutshell. different combinations of blocks do different things and it can be a bit overwhelming at first. youtube helps tons. whereas avorion is elite dangerous with a splash of minecraft. you have to mine asteroids to get resources to build a ship, you can do missions for rewards, hunt pirates, build space stations, and theres a central story line. you never leave your ship though. in starmade you're a person.
in my opinion you cant go wrong either way. BUT, since you asked for one or the other, i would vote starmade. theres just a ton more you can do. id recommend taking a few minutes and checking out some youtube videos of both. i will say that neither game is particularly fun for the first 30 minutes or so. both have a learning curve and it can be very frustrating.

So not playing MP in Starmade, can you still build Fleets and Stations and actualy wage a war of expansion like in the "X" series to control sectors. Is there a living breathing Universe in Starmade and how's it compare to Avorion?

I learned quickly how to manage fleets in Avorion, but i haven't played Starmade yet since some year back where some of that became possible. It was starting to show some kind of signaling possibilities and control blocks, which are completely absent in Avorion. But Avorion doens't have a character to control, so you don't need automatic doors...
Avorion has huge map 1k*1k sectors(but around 50-80% of them empty), possibility build your own ships/stations/fleets out of blocks with different characteristics and shapes, trade with NPC factions stations or fight against NPC factions, crew management, few bosses and some story/lore, plus has some MP content like player factions and cooperative.
But for now PVE content not pose too much threat to player(even on insane difficulty), especially when player has fleet, or big-huge ship, or familiar with games like X series and Freelancer.
Sorry i can't compare Avorion with Starmade, because played Starmade long ago when most of content not present in game. But i can assume that if Starmade use java then performance of Starmade poor compared to Avorion which on my PC with GTX 650 Ti work great(60 FPS) at medium-high settings.
I personally like X series and Freelancer game and have fun by playing Avorion, already played more than 200 hours.
Avorion tries to deliver a somewhat believable universe with npcs everywhere and a story to follow.
Starmade currently is a giant sandbox with a few entities to shoot and get shot by.
If you want an indepth build system with logic, rails for moving things around your ship and interior design, selfmade turrets and scalable weapons, starmade is for you.
The problem with starmade atm is that there is not much else besides building. the exploration aspect is not so great, and combat is basic at best. also the game goes through some big changes right now, so maybe wait for a bit.
Avorion has a different scope on the theme. Starmade focuses on your character and the things you build, Avorion focuses on your ship and the things around you.
Avorion features a great combat experience, with neat soundtracks and flashy effects, and a cool exploration aspect, a small story and random loot. It feels more alive.
But the build system is much more simple: you only build the shape of your ship, and change the stats of your ship with certain blocks and build styles.
I think both are great games

Actually the demo you speak of is the full game. They only have it on steam so you can support the developer by buying the game.

Since you can get Starmade for free you can download it, and store it some place safe for that rainy day when you are in the mood for something new.
I suggest then that you purchase Avorion.
StarMade, Space Engineers and Empyrion: Galactic Survival all suffer from “unobtanium” syndrome, aka, in order to have a vessel that can function and not die immediately to hostile threats you need pretty much every single material in the game.
Avorion, it’s possible to make a basic vessel with just iron, a competent one with titanium and a competitive one with a blend of naonite and titanium.
If you ask me which of the 4 is the better sandbox, it’s Avorion.
