the only way to get an angle is to use a block that already has an angle
what is needed is a key that like rotate, can be used to place the block you want, offest and above the current highlighted block. so you can place multiple angled blocks to make angled beams/hull; example

If I am hovering over O, pressing the angle key would allow me to place the new block in either X postion, a second angle kep would allow the inverse

this type of inserted block would go a long way to allow me to create better angles, faster
you are indeed correct. the rotation gizmo is working in steps of 90°. changiing it to smaller angles isnt available and wont be coming. if you want to build diagonal stuff you gotta use all the different types of slopes.
sadly there are two types of shapes im missing in this game which would add to more complex shapes: a corner section for angled areas and a 'twisted' shape for beams that are diagonal on all axis.
There is a corner section for angled areas; I use it all the time (should be a triangle or a diamond thumbnail in the build screen). As for the twisted shape, I think the only way to do it would be to use a regular block and a number of sloped blocks along the edges; never tried it, but I think the shapes are there (unless you actually want it to truly 'twist' about the axis like a helix).
note: I think those corner blocks are armor blocks (and maybe blank hull?), but not any of the other types. So, it might not be the best for min-maxing. After getting nailed with shield penetration weapons near the core, I always put at least a thin armor shell over everything, so I use the armor for shaping.
Anyway, if I missed your point, apologies. I am only 75% sure of what you are driving at. ;)
You can have the same effect of a 45 degree turn by using 4 right angle triangles together forming a diamond or 45 degree turned square. Likewise using 4 triangles with a square in the center there is no limit to the degrees you can "turn" a square shape using this method.

I do wish that there were some more complex / compound shapes included in the basic shapes in the editor. I would say that while it may take some geometry know how I don't think there is any shape that is impossible.
