Moreover, what totally bugs me is that in Keyboard mode you have Accelerate and Brake, so you can set your velocity say to mid-bar, while on Mouse mode you only have full speed and you have to keep it pressed if you want to move forward... why there's not a Accelerate / Brake in mouse mode too?

I think, because it is early access and the devs are working hard to fix already included bugs and server problems :)
Well, keybindings are not really a problem since you can rebind them to your likings.
The problem is that in Keyboard mode the ship react in a way while in Mouse mode the ship react in another.
In Keyboard mode you can set your throttle to any degree (going half max speed, for instance) and the ship will stay at that throttle level while on Mouse mode you can only go full throttle or no throttle and have to keep your "forward" key pushed in order to keep moving.
I hope it will get sorted out eventually.
