Each character has a "default" sphere grid (assuming you're not on the yellow expert one). Just fill it.

After that, its a matter of opinion what to do next, though most people send auron into rikku's and everyone else into auron's with lulu going into yuna's.

At least, thats what I've been doing.

Thats where things get complicated. You can potentially nerf your characters if you don't know what they should be picking up in terms of stats and abilities. I'm assuming you haven't played X before?

Get the likes of cheer, haste, slow, delay attack,delay buster, hastega, slowga and quick hit.

Ideally, I wouldn't advise first time players to use the expert without knowledge of the standard.

If you are a first-time player, I advise not to use expert sphere grid because if you don't have the knowledge to build your characters, I'm afraid the game won't be fun anymore to you

The base Tidus grid had: Haste(ga), Slow(ga), Cheer, Quick Hit, Delay Attack and Buster, Extract Speed, Provoke... Not sure what else there was. He was meant to be the turn rate/Agility manip and Melee fighter.

Hastega, Quick Hit, and Cheer in particular were his big moves. Haste to the party, for many rapid actions. Pay MP for a low delay Attack, for rapid actions. Buff the party Str and Physical damage resist.

The great thing about the Expert grid, when you know how to abuse it, is that it enables some crazy setups early than intended. It also makes it a bit easier to turn your favorite characters into Jack/Jill of All Trades, Master of All. Tidus could slip into Auron's 'section' of the grid to grab his Break moves, particularly Armor Break, before returning to his own section.

i intend to keep tidus that way, auron as the slow heavy hitter guy, yuna and lulu as a mix of black and white mages, but i have no idea what to do with the rest

wakka is accuracy and rikku is speed mostly.

Wakka mostly has the ailment attacks for Blind/Darkness, Sleep, and something else, as well as Triple Foul. Accuracy/Melee.

Rikku has Steal, Use, Bribe, Mug... the Thief-y sorta stuff. Melee fighter.

Kimahri was, in the base grid, in the very center with a very small chunk of the overall grid, the devs seem to have designed him to go down someone elses grid. His grid has Lancet, Jinx, Scan, and oddly, Ultima behind 4 Level 4 locks, and he was the weakest party member overall if everyone stayed purely in their own grids.

The best suggestion I have seen for Kimahri, is to use him as a second Yuna, by giving him spells like Cure, Protect, and Life. If making him a copy like that doesn't seem right to you, then my suggestion would be to try and go for a Paladin/Holy Warrior mix, by getting some White Magic from Yuna section, and some melee stats and moves from the guys and Rikku.

Get him Haste, Slowga and Delay Buster as soon as possible and nothing else matters.
