For me to get it working in VR I had to start the game in flat mode and adjust these settings and particularly from using the FSR default to DLSS.
If that still doesn't work try reducing the render resolution in SteamVR in 10% chunks and see if it will run. There may be a memory initialisation issue during startup and vr adds a big vram load.

Fixed an issue that caused the shop interface to fail to display correct in VR.
Doesnt work at all:
First, the loading of the game takes several minutes (yes, the loading for the start up menue).
I cant use my mouse and keyboard it seems.
I have to look to the side all the time to see the menue
Performance in menue is utter garbage
Every couple of moments it jumps back to the sign "No man sky - waiting" in that scenery steam vr background (the empty landscape, not the 3D environment).
Using a Vive Pro2.
Have a 3080Ti

So I deinstalled the game again.
I already put 100h into it. And I dont have time to waste for fiddling around with settingfs to get vr to work.
I got VR to run on "Enchanced" only after installing the steam vr beta and making sure not only NMS but everything that I need for VR is on my SSD and not my HDD filegrave
Edit: Also anything over 450-ish mbs bitrate either wired or wireless is killing my encode/decode latency. AVC works, HEVC does not for some reason.
Also check in what resolution the game is running in steamVR. try reducing the resolution and then slowly set everything up while having the steamVR performance graph (found in the dev options in steamVR).
I currently run the game very smoothly, on my valve index headset in 144hz mode
