Capturing ships is kindasorta possible in space (pirate dreadnoughts can be captured), but not on planets, There are many sites with crashed ships, and those can be either salvaged for scrap, or repaired and appropriated. Animals can (unless underwater animals) be tamed though, if big enough, you can even ride them, which is kind of fun, especially with flying animals.
NMS is primarily a single-player game. In, unless you change your settings, a multiplayer world, but the universe is so vast that it is easy to go any length of time without meeting a single player character.
O, and, base building, while a lot of fun, and as involved as a player wants to make it, is not really central to the game, which is mostly about survival and exploration.
That looks fun! Can I build a base inside/beside settlements?
All this is irrelevant when you want to build next to a minor settlement, trading post, Grand Archive, or what have you, I have seen some really nice bases that were basically tacked on to trading posts!
I'll give you an example, since I tried turning on MP for a while during this latest expedition. Related to another question of yours, can you build beside a settlement? Unfortunately, yes, in fact you can build in the settlement.
One such building was a destination during the expedition, and some jokers both made a base there and terraformed the land in such a way that you could enter, but not leave. Very cute. You couldn't use your terrain tool to fix, because it was "protected" by the proximity of the player base. Also very cute. Solution, turn MP back off, and the base disappeared. as did the offending terrain.
So yeah, if MP antics leave you unhappy, just turn it back off for a bit. :D
PS to the player(s) who designed that lovely trap: that was pretty awesome. Well done.
Probably going to make myself quite unpopular by posting this but I only play SP, even on expeditions - all the message beacon /base spam around every objective just ruins the discovery aspect for me.
Outside of the sentinels (space police) and a few other NPCs, you can't hurt NPCs and they will not try to hurt you. There are pirates but they only attack ground locations with their ships. They do no real damage but you can earn rep by getting in your ship and dealing with them.
You can tame critters. Some are monsters (I guess). They will be your companions but they are not really helpful, just cute for about 10 minutes and they get in the way alot.
Plenty of different styled ships flown by NPCs. You can buy or exchange for them.
You can fight pirates and you can attack friendly freighters- which will call in the sentinels(space police) and you will need to fight them all. Generally, this is not a wise move. You can never really defeat the sentinels on land or in space. With a lot of effort, you can gain a momentary reprieve but the only way to reduce your wanted level is to run for a station or hide out until they get tired of seeking you.
This is not a good game if you want a lot of combat situations. It has it, but very simple and usually disappointing if that is the main reason you bought the game.
It is primarily an exploring game and there are no real goals other than to enjoy whatever it is you are doing at the moment. If you want some grand purpose or wish to take over the galaxy, you will be disappointed.
If you accept the game on its terms, you can have a lot of fun. You may even discover you like building bases. It takes awhile to master the process but it is very enjoyable. I only play single player and it is fun...for the last 4500 hours at least.

There are settlements which you can get 1, build bases, etc. Those are more of a side to the game though.
You can interact with NPCS for basic things like learning a language, turning in items, or getting quests at space stations.
You can tame pets. You can get other ships.
Exploration is the best part, but also getting the quests at each space station gives you things to do along the way.
