If your goal is to give feedback to the developers, you are in the wrong place for that. You would want to send the gripes to the Zendesk[hellogames.zendesk.com] as feedback.
But bugs have some chances to be fixed if and only if they are reported to the Devs, better and quicker action from the Devs is expected if and only if you chose the right way to report them, and about HG, IIRC you should have used this link: https://hellogames.zendesk.com/hc/en-us/requests/new
Have you already reported this game breaking bug on Zendesk?
So, I don't understand, are you telling me that you changed your mind in these last 3 days about this game and before of that you were recommending it, but right now, after just 3 days of game breaking bugs you have totally changed your mind?
Have you backed up regularly your save games? If you have already backed up your save games, have you tried to restore an older than 3 days save game just to see if these game breaking bugs are still there?
I agree with you that QC is needed in MP game and I add that it's needed in every piece of software, games or not, MP, SP, whatever.
Would you mind to tell us what this your main quest is? Would you mind to tell us at what point this your main quest is stalled? Otherwise it's very hard to try to help you...

IDK if I would define NMS a MP game, it seems to me much more a SP game with a band aid netcode that adds some kind of MP interaction, but it doesn't seem to me a MP at all.
It's born a SP game, and has been so for years, HG introduced MP, but actually the game at its heart it's still a SP game...
...and I wouldn't undervalue the fact that it's really an enjoyable SP game, and that NMS as a SP game is still selling so well and so much...
I don't see any video at all, maybe if you posted a link to the video it would help us to understand better, but you are talking about a video that we can not see...
The issue is the phase beam shoots its own ship. It seems to be worse on exotics and explorers but I've seen it on other ships also.
I usually run a max.'d out phase beam as my only weapon (why?: it's always selected as 1st & only weapon, long range, recharges shields, KOs with a couple of taps at close range). Right now though, the phrase 'shooting yourself in the foot' comes to mind! Definitely not a good strategy on permadeath!
I've seen this reported in a few places now; trying to avoid ship combat until it's fixed.
It's the Ghost of No Man's Past come back to haunt us; I'm sure we've seen the like before.

Only thing to do is swap the Beam out for something else in the meantime.

Yeah. Many users have been repeating this for years, and it seems that you found out the hard way.
The best you can do is finding workarounds to circumvent the bugs and enjoy the things in the game that are functional.
And don't expect too much from updates, lots of fuss for very little stuff. What you have is what you get.
