The in game controls to remap keys lists all the commands for the game. The in-game guide may help too. Melee on a controller is Left Shoulder button I think. It's there in case you get stranded on a planet without any resources to repair or refuel damaged multi-tools, so you can mine the most basic resources to fix them, without needing any tech. You might mine carbon thumping a tree to make creature bait, so you can ride to safety, or refill your mining laser. It is possible after dying or landing in a new galaxy that equipment will be damaged.
Things do not do well with being smacked. Me smacking a sentinel? It flies at me and behind me like I just used a lasso on it.
VR? Well it's a great alternative to close range harvesting, has no momentum, but still things fly behind you if they aren't inanimate objects.
I agree with you, I'd love some melee weapon options in the game. Like a Vibro Sword or what you said, or even just ANY melee weapons. I'd get a kick out of hacking on sentinels in melee.
But I doubt we'll ever see that happen in this particular game.
