There's a specific folder within the SteamVR's Drivers that is linked to the Kinoni stream viewer (with KinoVR uses), and if you go in there and delete that folder, it'll have no link to open it.
So go to; Steam>steamapps>common>SteamVR>drivers. In there, there should be a folder labelled Kinoni or something like that, delete it, and then 'Y' will no longer launch Steam VR.
This may be a fix for other 3rd party softwares as well, just look for your specific name of the software you have in that drivers folder and get rid of it. As to why it was opening on 'Y' in the first place, I have absolutely no idea, but hopefully this helps.
Side note, I haven't tested this long term so I don't know whether if I restart my computer it'll all come back. I'm pretty sure it won't though.
For me was a combination of first uninstalling SteamVR then removing the kinoni forlder and then when SteamVR is installed again, it won't open any more with the Y key.

I FOUND A FIX!
The problem is the Kinoni driver / KinoVR.
