For each application...
1. Right click on app select properties, select updates tab, select only update when I launch it otherwise it may show up in your downloads list at an inopportune time...
2. Find the app id of the app to suppress. Go to community page (in steam) for the application and make note of the number in the URL... example Rec Room community page is: https://steamcommunity.com/app/471710 so the app id is 471710.
3. If SteamVR is open, then exit it.
4. Delete steam.app.{app id} file in the {Steam}\config\vrappconfig directory. So on my system to suppress the display of Rec Room, I would use file explorer to go to "C:\Program Files (x86)\Steam\config\vrappconfig and delete the "steam.app.471710" file.
Now it will show up on the bottom of the list
5. Move or rename appmanifest_{app id} file in the {Steam}\steamapps directory. So on my system to completely suppress the display of Rec Room, I would use file explorer to go to "C:\Program Files (x86)\Steam\steamapps directory and rename the "appmanifest_471710" file.
Note - Going forward, I recommend investing in a removable drive and adding a second steam directory on the removable drive. App won't show up when drive is not plugged in. May still need to delete the file in the vrappconfig directory if you launch it from inside SteamVR.
