theoretically yes, but there will be horrendous lagspikes if people pop in and out of view/draw distance

It's just because I've seen videos with like easily over 50 people in at once

Nowadays the limit is actually 128 players in a Convoy session. But you have to change a parameter somewhere in the configuration files from the default 8.

I guess that SCS choosed to keep the default at 8 because of the potential lagging issues with more players in the same session. If you intentionally increase the variable you are expected to be aware of the consequences.

As the other guys have explained, I will add just this - when doing more than 8 players the traffic does not work and you need a server rig with good specs.
