You don't really need a full dedicated server, even a competent VPS would do actually. I use OVH myself and the main thing about using a dedicated server for convoy is that it can remain online for you to hop in and out of out your leisure. They're pretty useful IMO for those willing to do the little setup that's required.

VPS = Virtual Private Server - It's essentially a "dedicated" server portion from a box that has a CPU with several cores and you're allocated one, two, or more depending on the configuration you select and some RAM. (this can vary a bit as well) It's isolated from the other provisions as well from other customers, so it's your own little environment to play with.

OVH = Hosting company that offers a wide range of web hosting, VPS, dedicated servers, and colocation offerings. They are based in France I believe, with locations in several other countries. Currently, mine is up in Canada for what I have.

Of the many offerings I've seen from my research, OVH still has some of the better prices for the specifications you may want in a VPS. Now, this was some months ago, so prices may have changed, but there are plenty out there.

Oh yeah, I should point out that very likely, you'll need to have some basic Linux CLI knowledge, or be willing to learn it. There are plenty of guides online on how to navigate them, and I'm sure OVH provides some if one looks around.
