TruckersMP came first, and has a pretty large community. But you play at the mercy of those players. You can find busy locations and see where players are from the below links:

https://traffic.krashnz.com/
Convoy came recently, with more control and mod support. But you're limited in amount of players(8).
In the 8 years TruckersMP has been around(formerly ETS2MP), there have been zero alternatives to multiplayer. No competition has ever arose. Some projects have been started, but only 1 had shown any amount of progress and they stopped.
The conwoy mode is better, only a few trolls, mostly admins there, password protection, massive Linux support, great level 1-2 traffic, so its better .
Convoys is built in the game and hosted by by a player and currently limited to 8 players. I think the intended audience is groups of friends that know each other and want to drive together.
"what to choose?" Completely up to you and what YOU want from multiplayer. No one else can decide for you.
I you want "hassle free" experience this is the way to go. Trick is to find said group of like minded drivers.
I should also mention, Convoy mode being part of the "actual" game, has other traffic in it.
TruckersMP mod does not have other traffic in it, only other player trucks. This makes the game less immersive, but at the same time more manageable for less experienced drivers.
