If it is something smaller like GPS changes or smaller mirrors I just disable the mod and carry on. I avoid mods which I think would be a problem after an update such as a truck mod.
Only time I remember using an older version was when Scandinavia came out but that was many many years ago.
Usually I don't have mods that brakes game big time, so I'm always on latest version, even if some mods stops working.
I had only once returned to previous version cause I had something started (can't remember what), and game update messed me up.
I only use mods about economy, traffic behavior, vehicle additions to traffic, interior accessories, and driveable cars. I don't use map mods.
From the mods above, only one crashes the game if not updated, but doesn't corrupt the savefile if disabled: the traffic behavior one. I simply don't play the game while it's not updated, as it usually takes less than 2 days.
I never save and exit while on driveable car mods, as this corrupts savefile if game is updated but mod isn't. I always jump to a vanilla truck before closing game.
And I only use driveable car mods that are allowed to be editted for personal use (non-protected files), as I can add the new game version to its manifest file before it's officially updated.
Play on a vanilla profile until your mods are updated.
Currently I use only 1-2 map mods. I know they work well together and they are easy to monitor if they have been updated or not. No other mods, no trucks/trailers/accessories/economy/traffic/seasons/...
Personally I rather spend time playing the game than dealing with issues from 3rd-party mods.

If nothing is forthcoming after a week or so I update the ones I can myself and if nothing happens with any others I remove them to a "Mods need updating" folder which only works for now w/s mods. Workshop mods that I can't update I make a note of title in notepad and just keep an eye on any updates in workshop. As an example, I have updates Sisl's cab mod a couple of times but now he's working for SCS it hasn't been updated by himself for a couple game updates now. Would be a shame if it does fall by the wayside as I like using the moddable parts of this mos (I have skinned the Volvo toy with my own company skin) and it would be a shame to lose them.
I ran a vanilla profile for about 3 weeks then discovered the joy of mods.
Yes it was annoying at first having to sort them out after updates but just took it on as a learning challenge and now don;t think about it and just sort it.
Then I have two modded profiles, one with all of Promods map mods and every other mod I use, and one that's the same, but without Promods to play when I'm waiting for Promods to update or play WOT stuff on.
Only a few mods are from others that I trust and know get updated, aside from that most other mods besides map mods and truck mods are my own mods.
Other than that I try to stick to a few rules, don't buy garages (if any depending on the profile) on Promods territory and don't give truck mods or modded trucks to hired drivers (if any depending on the profile).
Aside from that I have some other profiles to test mods, or use standalone map mods on.
As a sidenote, if/when the Benelux gets a rework I won't need Promods anymore :-)
and how you will than play the game with out burning eyes and numb ears?
in the origanal the game isnt playable for me.
and the defininition is: the update broke the mod. the mod was first!
And no, the mod broke the update. Thus your problem. SCS does not have to make their game to accomodate your mods.
