You can try Scania Truck Simulator. That one's actually good for practicing how to reverse park a trailer.

"Farming Simulator 2015" seems like another good one. I haven't personally played it, just watched videos, but it has the same satisfying "grow your business" aspect as well as pleasant driving.
For less simulation-y I think "Banished" is very relaxing. Build a small rustic community, watch your citizens go about their lives, etc.
City Car Driving looks interesting. Is there a purpose other than driving around?
As far as I know there isn't an overall money management or company building like you find in ETS 2. They do have mod support so there are plenty of non-standard vehicles available. To me the biggest appeal is turning the traffic to super busy and suuuuuuper aggressive, and then trying to drive around. It gives me an idea of overseas driving, at least from what real life dashboard cam crashes in Russia tells me. :)
The 18 WoS series by Valusoft is good, not as realistic but fun.
Simulate lunar landing, firefighters, farming, post office and a zoo all for 1$. Bump it to 6$ and get car mechanic and cities in motion 2 as well, while 10$ adds on Space DF-9 (basically a community builder in space).
Even the 1$ option gives a bunch of games to check out and see if you like those kinds of games. :D
- GTAV has really nice-feeling driving and afaik doesn't lock off the world at all, so once you get past the intro missions you can just drive and explore.
- I really like the Aquanaut's Holiday games for the PSX and the Endless Ocean games on Wii. There's also stuff like Africa on the PS3, though I haven't played that. Shadow of the Colossus is wonderful for just wandering around in.
- It's sort of loopy but Mike Oldfield's MusicVR games are free.
Anyone know of SCS's Bus Simulator ever had like freeplay modded in? It always bugged me how routes ended after a single un.
