I have done this with my RTX 2070.
Get the Nvidia Profile Inspector and install it.
You MUST to do the first 3 steps.
I then did the further changes to the config file.
I did "LOW to MID FPS HIT"
I did "MID to HIGH FPS HIT"
I did the first line in "EXTREME FPS HIT"
Next you need to do the Steam Launch Options.
Read the text to determine the best settings for your RAM.
I also created a mod to change the LOD for Trees and Grass but it hit my system to hard so I removed it.

I don't think I can find it in another folder, can I?
It is the config.cfg in the "\Documents\Euro Truck Simulator 2" folder.
It is not actually called global config.cfg but is the global configuration file for the game. There are other config files that are used in their own profile.

You then should be able to modify it.
I have kept an config,cfg backup from before I did the changes. Makes it easier to revert if needed.
Another tip:
Export out from the Nvidia Profile Inspector your settings for the game.
As when Nvidia release a new driver it resets them back to "standard". If you export then you can import the settings.
EDIT:
It should be no problem putting those lines in the config.cfg file.
Did you do the multimon configuration including the download?
Sorry I forgot to mention you have to do that as well.
But it is all in that post what you have to do.
Had already exported NPI settings onto my desktop as well, thanks for the tip anyway, I do appreciate your help.
And here comes something I don't understand (I'm not a computer expert at all, as you can see); my laptop only has one screen, and 'dxdiag' shows two of them. I'm sure there must be an explanation I don't know LOL
Screen 1 shows Intel(R) UHD Graphics
Screen 2 shows Nvidia GefForce GTX 1650
After unpacking the ZIP you should have a multimon_config.sii file.
For DUAL, TRIPLE and QUAD setups, check this post by JHTrucker for instructions on how to adjust your setup:

Place the multimon_config.sii file in the same folder, where you have your global config.cfg file.

They are not screens they are your graphics cards.
The Intel is the "onboard" built into the CPU
The Nvidia is the dedicated "External" video card.
You need to make sure you are using the Nvidia card to play the game.
You game.log file will tell you which one it is using.
Please post your complete game.log file from the crash to http://pastebin.com (copy/paste, split the game.log if it is too big) and post the link to it here please. This way we can find out what the problem is.
You can find your game.log in your documents in the ETS2 folder as a default install on Windows. (If it is not there check OneDrive.) On a Mac the ETS2 folder is in your Library and there in the Application Support. On Linux the ETS2 folder is in the .local and there in the share.

I got that from my game.log file, no results when searching 'UHD Graphics' I guess I'm using the Nvidia card.
Also, this line doesn't exist in my config file either; uset r_smaa "0"
