#1. It's a GAME. You play it as developed and adapt to it. That's entertaining and just fine. It's not a governmental project designed to build an accurate training device for real world truck drivers.
#2. Also, a precisely "accurate" physics model would be a total pain in the butt to drive and not enjoyable as a game, because YOU DON'T HAVE REALISTIC HARDWARE. You don't have a full motion seat that simulates G gain, traction loss, and surface irregularities. You don't have a clutch pedal that allows you to slip the clutch in realistic fashion or feel a realistic response, and IF you have a FF steering wheel, it's FAKING the feedback that should be coming from other devices and delivering it through the steering wheel. So even if the core software had "realistic physics", you have no way of realistically interactiing with them.
#2. Like the racesim nuts who whine for "realistic physics" yet have no actual engineering or driving experience in the actual units, who are you to determine what's "realistic"? Again, post your degrees, CV, a few work project results and or laboratory results you've achieved.
#3. And no, a SUPER BOUNCY cab, super slippery traction, and insta-crashing at low turning speeds is NOT realistic physics. Unless you can supply some actual data (numbers) from in-game testing in relation to actual truck data, you're just blowing steam out your behind.
