Open "game.log.txt" after the crash, (NOT game.crash.txt) in Notepad or other text editor.
Copy it all and then post it to pastebin.com (split in two parts if too big).
Post the link to that page on here.
If pastebin is not available in your country you can use http://rentry.co and post that page link here.
You could try and verify your game files first: You can do this by doing a right-click on the game in your Steam Library and going to "Properties". There you go to "Local files" and there should be the option to verify your files.
Also update your graphics drivers ONLY from the manufacturers website, and do a fresh install.

I know that people have reported slowing in Iberia, but they tend to do that for every DLC map released for ETS2 or ATS, as the maps get more detailed and the GFX engine is improved in the game.
Turn SSAO off and play around with scaling and anti-aliasing settings for a start. You could also try using v-sync or FPS capping. Do you have the Steam fps counter turned on in the game to keep an eye on the fps dropping?
Mods won't make fps any better, they can cause lots of unintended problems, unrelated to their function, so testing without any may help.
