If you are using modded engines, that is not the fault of the game or SCS. Ask whoever wrote the mod directly if it can be changed.

The indicator for standard cargo should also be higher if the transmisson lets you drive at a lower rpm at higher speed and with a 4x2 chassis compared to a 6x4.

750hp works fine with normal cargo (approx 20t). You can haul that up mountains with no fuss. It’s a bit overkill if flat land is your thing.
500hp is great for fuel economy but will struggle when driving in mountainous terrain.
The transmission is always key. With the right transmission you can get a lot of power out of 500hp. At the same time you can make 750hp a big waste with the wrong transmission. Fuel economy can also be prioritized with the right transmission.
It all depends on, what your goal is. It’s also possible to go for 580/600hp and the right transmission, so you have an allround solution.
The heaviest loads requires 700+hp and a transmission with 12 or 14 gears, so you can crawl the Alps or other mountain ranges most effectively.
