Report a translation problem
When you see that pink sky, stop the truck immediately. Get out of the cabin and run for the nearest tree. Wait there, in a crouched position, until the pink sky goes away.
That sounds like a pretty good example of a driver for your graphics card.
Check that its updated.

It's not really a major issue, but I was hoping there would be a known fix for this. Thank you for your feedback.
So it has to be in your settings or graphics.
I ve not done a search tho' for anyone else reporting it.
Might want to look at that.. or any graphic oddities. Might be an answer...

Got any mods running? Those can make a few things weird happen.. but that all depends on what / where you got it.. a lot of places to get good mods... but a lot of bad ones to.
Edit: A fresh gamelog copied to here would help also.
Look in your game.log.txt file. You'll find it in
"C:\Users\*your_username*\Documents\Euro Truck Simulator 2"
Warnings and errors appear in that text file.
You could try verifying local files.
Right click on ETS2 in your Games Library.
Select "Properties"
When the box pops up, click the "Local Files" tab.
Click "Verify Integrity of Game Cache"
This may take a minute or two and will automatically d/load any files that are missing or corrupted.
If you dont currently use mods i would reccomend getting all the Jazzycat mods as they add more variety to the very limited traffic and cargo that is within the base game and is completely stand alone so you are less likely to encounter errors when updating/removing the mods
Also my apologies if you dont use mods and my comment answers nothing for you, best i can suggest in this case is to delete game data and redownload it from scratch...
