You can not via any legit way get there. The beta tab has only a limited amount of versions available so the oldest and least used versions will be removed as the game updates.

Not sure why you would want that anyway.

I want to see how it used to be ets2 in that version.

To see it passively, there must be Youtube videos around. To experience it, you might try to buy a DVD second hand if:
a) you are lucky enough to find one
b) live in a place where trading used software is in line with intellectual property rights (at least for the EU it is)
c) it is worth you the money

The earliest DVD versions did not require steam to run, so you can run it without conflicting with the current version.

Maybe i'll find in a time the dvd. As i saw a clip of the old version of ets2, ets2 was so simple but still looked wow for 2012 to be honest.
The easiest way to see how it looked like back then may be playing ETS"1", at least graphically speaking. The map scale was much smaller though, even missing countries.

Now if you want to see how the maps were too, the best way would be playing both UK and Germany Truck Simulator. As you can imagine, you'll only see these countries though.

In that regard GTS or UKTS would be sufficient, ETS1 is too far off. No idea though if they reused the Engine from GTS / UKTS as well or did improvements for ETS2 premiere release.

I remember when the map was that tiny! Got my Pathfinder achievement that way.
