Can'it offhand say what my FOV is but will let you know when I fire the game up.
As a rough guide I can see about 2/3 of dash/windscreen and that's fine.
Will go to 3413x1440 but have to reset the display outta game as everything is so tiny.

you might want to dabble with multimonitor config. for this you have to enable the developer console: open config.cfg in documents/euro truck simulator 2 and search for the line
uset g_developer "0" and change 0 to 1
then you can enable multimon modes from the console: (~ key below ESC)

doesn't matter if its joined monitors or one ultra-wide. preset 2 works with 3 camera-angles that are linked
