Roads have "90" or "120" speed limit sign but mostly it's limited to only "80"?
why?

In most European countries, speed limits for trucks are different (lower, sometimes way lower) than speed limits for cars. Unlike in US, where different speed limits for trucks are usually noted in speed limit sign, in Europe that's not the case and it is presumed that truck drivers do know truck speed limits. GPS navigations can also show the truck speed limits if you set them to do so and that is the case for Route Advisor, the in-game navigation. Since this game is truck simulator, truck speed limits are default settings in the game. You can still change them to regular speed limits in game settings, though, if you wish so.

Some places in the US, you can drive 85 mphs ≈ 136.79 kmh in your 30-50 ton truck, wich from a european perspective is pretty wild. :P

Which it is. The lowest in ATS is in CA with 55mph which is nearly 90km/h which is the maximum speed limit for trucks in Europe.

I have to say I’ve been playing ETS exclusively for a month as I was burnt out of ATS.

I follow all speed limits while playing (unfortunately not in real life).

Anyhow I recently got back into ATS and can’t believe the speed difference. On road with 70mph limits I feel like I’m flying!

On a side note: after playing ETS for a eh joke and going back into ATS I was having the hardest time getting my truck up to speed. Turns out muscle memory was culprit and I forgot I had four more gears available Hahaha

anyway i just remembered something. some roads in some countries have 100 km/h speed limit, for trucks. why is that even a thing when WoT limits the speed to 90 km/h?

Because it is a speed limit and not a minimum speed. So they can sign whatever they want. And all trucks in the EU needs to have a speed limiter active that limits their speed to 90km/h.

Have you not noticed that other (same class) trucks, drive past you like your a learner when you follow the speed limit on motorways. Other trucks will always overtake you at the same speed as cars and have done so since the game was released.
