2) You must enable multimonitor mode for ETS2
* Find the file config.cfg (<user profile>\Documents\Euro Truck Simulator 2\)
* Edit the line:
uset r_multimon_mode "2"
Mode 2 assumes you have three similar monitors and want to span your view across them equally.
First time you launch the game after that set your monitor resolution in-game to cover the entire span (for example three FHD monitors would be 5760x1080)
*NOTE: The game main menu is always shown only in the "middle" monitor, so don't worry about that.
That should get you started.
There are more advanced controls in the same file for more adjustments

But default "0" options work fine for me. If you do not "hard set" options here the usual in-game "seat adjustment" FOV slider is available. Border_fov is for bezel correction should you need it.
There is even a completely configurable option (mode 4) that uses a separate multimon_config.sii for setup. You typically don't need to use that unless you have even more monitors or they are of different size or orientation.
Might work (basically telling the game you have and ultra-ultra wide monitor).
But does that not produce extreme warping on the side edges due to fov? That is what happens to me (AMD) if I don't set multimon mode.
When i play const. sim or even red dead the 3 screens work perfectly, but for some reason in ets2 when i first load up the game, the start up main menu appears on all 3 screens and that is what has me stumped? Even after going into config and changing the settings, it doesnt seem to make any difference?
If the setup wasn't working for any game i play i would admit that its me that's doing something wrong but like i said, other games are working bang on, its just ets2 for some reason???

Is NVidia Surround/AMD Eyefinity span enabled?
Just want to say thanks to everyone who took the time to help me out, i really appreciate it. I recently sold my PS5 and built my own gaming PC. I really have a lot to learn yet, and to be honest, sometimes i regret my decision and miss the simplicity of console gaming, but then, when i figure out something new with the help of people on these forums, i see what drew me to change to PC gaming in the first place. When you know what you're doing and how to get the most out of your gaming, there really is no comparison between this and console.
Anyway, I'll continue to learn as i go.
