Highly strange reading this issues and no fix when reinstalling + new profile.

1- Can you post a screenshot of the visual bug?
2- Can you be sure that you wiped the game folder from Steam folder after uninstalling prior to reinstalling it? Mods that are manually installed stay after Steam uninstall as Steam is blind on extra files.
3- Can you double check the mirror position values through F4 key? Perhaps they are all the way inward capturing your truck paint due to a bugged value.

I had the same problem too. Even a vanilla profile showed grey texture on both electronic dashboard and infotainment screen.

I downloaded the dashboard fix mod (which came out for 1.3x version but still effective). Once I load that mod, the issue is solved. And then I removed the mod, still no problem :)
