I think it's this one, the "HORI Racing Wheel Apex for Playstation 5, PlayStation 4 and PC". What settings exactly?
Basically that wheel is meant for race games.

and one for ets2 settings https://www.youtube.com/watch?v=Kt2n35xB6K4
My Drift OZ steering wheel/pedals has always been recognised by the game as an Xbox 360 controller, it doesn't make any difference for setting it up in the game. It is just the generic name assigned for this type of controller.
Make sure it is plugged in and calibrated in Windows devices, then use the game settings to adjust the deadzone, sensitivity, linearity etc. I believe you have to disable Steam controller input to stop Steam interfering with the game settings.
Even racing wheels with a 270-degree turn can be configured to work fine in ETS2/ATS, but it's difficult to give you actual settings, everybody has different requirements and all the wheels themselves are different, even if they are all seen as a generic Xbox controller.
Experimenting and tweaking the settings is what will fix it.
So yeah, turns out I was just being daft. Thank you all for the replies though.
One more thing. It seems that the pedals correspond to L2 and R2 on the wheel, and the back buttons correspond to the square and X buttons. Is there any way to get all my buttons to register as different buttons? I did a workaround by simply not using square, X, L2, or R2, but it would be nice to have these buttons too.
I have headlights on/off, indicators, cruise control on/off and increase/decrease speed, horn, camera view, full screen map view, and wipers. Still a couple of buttons not used.
