For example might be a good idea to put light and whipers on the keyboard and just activating it before sitting down (light can be kept always on anyway to prevent penalties and the 1st whiper position is the automatic mode, where it adjust according to the rain strength). Also Retarder and engine brake can be set to automatic mode, if you don't want to use them that much anyway
For the menus you've to test, if you can move around with the D-Pad. For Controllers there's definitely menu support, so might be possible for wheel as well. Also if you've an additional controller, then you obviously can also use that for the less important stuff.
Now it has got so that, for me, thats too many buttons so I use an old 7" tablet and Sim Dashboard.
To me, this so much easier as all I need is shown graphically to me next to wheel and acts as a button box for about 3-4 pounds assuming you have an unused tablet kicking about.
Its still a work in progress but all the functions use default buttons where possible:

Can be used on all trucks. Just need to change the name tag and type gearbox your using. You can also set this up from scratch. There is a free version but it only has bout 3/4 widgets. I think the pro version is about £4 then you can go as far as you want as you can have several pages per game. It can show map but not route ATM.

Initially i wanted to try this out in VR, but hearing all this it seems to be more hassle then it is worth for me.
I don´t want to try it that badly that i will buy new equipment like tablets or a wireless keyboard.
All Racing games i played so far did not have any problems with the distance and the lack of mouse or keyboard. I can completely control everything with my wheel without anything else.
I will play other things for the moment, maybe some day i will come back and have a go at it again.

a usb extension cable is fairly inexpensive to bring the keyboard closer.
as for the that last part about racing games, they almost certainly didnt have the number of button bindings ets has. its not even close. i haven't seen one where you need to attach trailers, enable diff lock, raise/lower the truck/trailer aux. axles, raise/lower retarder or cruise settings, enable/disable the cruise/retarder/wipers/beacons/high beams. you get the point. just watch a youtube video on driving a truck and another on a sports/racing car. its not the same.
you could minimize the button usage and play closer to a race game, but thats up to you to decide whats important or isn't.
Just to make sure that you didn't misunderstood something when buying ETS: This is a Simulation for Truck driving, not a racing game.
It's quite strange to even think about comparing a highly specialized racing car to be good in only one single situation with a big working machine, which needs to be functioning in many different areas while at the same time being able to follow traffic laws of 4 dozens of countries.
But obviously as already said: You can automate many things (most of which racing cars doesn't even have like the 2nd and 3rd braking system, lights or whatever you don't want to care about).
assign the keys. i have done it so it absolutely is possible.
Not wishing to cast aspersions on your set-up but I have 20 buttons on my Logitech G PRO wheel and that is nowhere near enough to assign all the keyboard functions. There are 46 functions (not including steering and speed) just for the truck. Add radio, in cab views etc and that is a lot of functions which even with my set up (32 buttons on wheel and G25 shifter) I would be unable to assign.
Please let me know which wheel you are using as i am intrigued.
i like to keep things simple
