Just select all the input devices you intent to use (wheel + pedals, Keyboard, SKRS and shifter adaptor) using the drop-down menus at the top of the controls options screen and you should be good to go.
But I use an adaptor by Leo Bodnar to use my old G25 shifter with my G920 wheel, it plugs straight into a spare USB port on the PC to make it a separate controller. He also does an adaptor for for G25/G920 pedals that does the same thing, great for tidying up the wiring on your desk.
He has his own web site and sells direct. Just Google his name.
Basically, its a modified serial to USB lead.
Working fine in ETS2. So many buttons!!!!
Just need to tinker with it to setup with AC, ACC, RRE3 etc.
