Also poland as well, but you might need to deviate from the initial gps-route, if you want to avoid small streets or tollbooth as much as possible
Also the scandinavian countries aren't that bad, if you don't mind to have one tollbooth on the only bridge leading to it as well as a few more around 2 cities.
And definitely avoid france and italy, since they've a tollbooth at pretty much every highway section.
I don't have any informations about anything past france or poland though, so i can't give any informations about there.
What's your definition of that though? With a single monitor setup it's pretty much impossible to see both without ridiculous amounts of FOV, so using the mirror-option (F2) is definitely needed if you don't want have both on the screen (obviously can't tell, how it is for multi-screen setups, since i'm only using one screen).
However you can also use F4 to setup your seatposition and FOV, so might be a good idea to use that
Notes on everything else:
Austria is, interesting. I would say it's like ATS more then ETS2 just from how much it has changed so if you don't mind the weigh stations I'd say do Austria. The weigh stations have giant signs above the highway and they will tell you to move over when they are open.
All the Going East DLC countries suffer greatly (like the UK) from old game syndrome and parts of them are easy going then go directly into 6 tolls or downtown X city with possible sudden speed cams.
Sweden, Denmark and Norway suffer old game syndrome but they are also roads you kinda need to keep focus on in areas due to the above but also tight turns (mostly Norway). Denmark is the closest thing you'll get for now of what old Germany looked like and it's easy to drive but quite small and kinda, boring to drive through right now. But I'd put it in the middle of everything.
Italy overall is ok but I'd call it midlevel of caution just due to all the lane changes depending on where your going and some places are like France regarding toll booths but they are very well marked. Also Italy has in my opinion the best road signage in the game regarding what each lane is doing.
Estonia, Latvia and Lithuania are overall relaxing drives till you get to some of the towns - cities where it can be a bit confusing to navigate but they are mostly 2 lane roads with few intersections and when there are intersections you more often then not have right of way or a yield sign. The A1 in Latvia is the only "bad" road but that's due to (my memory may be lying) with rapid speed changes. Russia should just be ignored (not for current reasons) but due to the boarder crossings and parts can be quite annoying to deal with.
I would suggest you avoid all boarder crossings involving Romania, Bulgaria and Turkey. They are probably the 2nd most difficult to drive in countries atm but also have boarder crossing which can make you late. But Bulgaria does have some nice cursing roads like the A1.
Sardinia, and Corse are quite nice to drive on but they are midlevel due to the sudden changes in road structure like the ss131 at the SALSRL company entrance.
Portugal I have yet to get there but based off the map I suggest you avoid it due to all the toll booths.
The Baltic States and Poland in PM also tend to be pretty nice. Poland has a lot of old school toll booths with no electronic collection in game. Not too sure if that's the case these days IRL, but thankfully the A2 and A4 highways maybe only have 2 to 4 max, and A1 has only 2.
PM really changes the roads to be much nicer (and realistic). Also adds a good deal of roads, especially in Poland and Hungary.
