HOW playable with a controller?
is it too much of a hassle to play this with a controller?

I enjoy playing with controller. It is no hassle at all and makes a longer drive more comfortable where you will be using cruise control most of the time.

It should be much better than playing with just keyboard and mouse, if by a controller you mean a gamepad (joysticks or steering wheels are classified as controllers, too).

Perfectly playable with a gamepad - I use a Logitech F510 but would reckon that pretty much any PS or Xbox style controller would work just fine.

I use xbox 360 controller... the reason for cruise control making it more comfortable is you have to constantly hold the right trigger down with gamepads. Once activated its easy to drive one handed as steering and brakes are both on the left hand leaving the other hand free to enjoy some tea and biscuits or any other non alcoholic beverage you want while driving.

It is also possible to configure keys/buttons on all devices to do multiple things for even more convenience. For example.. the A button on my controller is set to Cruise Control, Center Camera and Accept/Ok. Your always going to want to center the camera when cruising so its a good combination.

To change it you have to edit controls.sii file using notepad.

You find it in Documents\Euro Truck Simulator 2\profiles

You can add the same button to multiple actions in here where in game it would only let one.

When I did Cruise Control, Center Camera and Accept/Activate on one button i edited these lines to look like this:

config_lines[100]: "mix cam1 `keyboard.key1?0 | joy.b1?0`"
config_lines[176]: "mix activate `keyboard.enter?0 | joy.b1?0`"
config_lines[189]: "mix cruiectrl `keyboard.c?0 | joy.b1?0`"

so I added "| joy.b1?0" button to all i wanted.

Its been a while since i played ETS2 though so the config lines numbers can be different and you should figure out what you should add for joypad buttons from looking at what you have already set up in game.

I started to play this with controller, and just got the wheel recently, I'd say controller is definitely the most relaxing way to play, and wheel is the most immersive way to play.
(keyboard is decently relaxing too but your hands are in fixed place unlike controller you can rest on lap)

I personally use a Xbox 360 controller. I feel as so I have more control of the truck compared to a keyboard, especially as the triggers are pressure sensitive which does help when wanting to maintain a constant speed when not using the Cruise Control

Back in the day I used to play with keyboard but after I got a wheel I changed to wheel, I was a little bored so I tried Gamepad and it was nice for few transport.

I basically would change my Controls from Wheel to Gamepad and Gamepad to Wheel from time to time but unfortunately my Gamepad broke and im not really willing to spend money for a Gamepad that I rarely use.

I also tried mouse but it wasn't really what I expected, never tried Joystick though.

Joystick with a profiler or JoystickCurves for tweaking the curves of the steering and braking axes (more precisely than just with steering non-linearity setting of the game) with connection of FaceTrackNoIR/FreeTrack/TrackIR is quite comfortable way to play the game. And without head tracking the twisting handle of the joystick can be used to look left/right, but it isn't as much responsive as the head tracking. There can be separate throttle and brake axes set (e.g. lower part of the Y axis of the handle, with only upper part of it having no real use in the game), and hat switch can be used for example for blinkers (left/right) and sequential gear switching (up/down), with plenty of buttons (if the joystick has them) left for other functions.
